03 - Spread chickpeas on the prepared baking sheet in a single layer. Roast for 20 minutes, shaking the pan halfway through.
04 - Remove from oven. Drizzle with olive oil and sprinkle with smoked paprika, cumin, garlic powder, cayenne, salt, and pepper. Toss to coat evenly.
05 - Return to oven and roast for another 12-15 minutes, shaking once, until golden and crisp.
06 - Let cool for 10 minutes—chickpeas will continue to crisp as they cool. Enjoy warm or store in an airtight container at room temperature for up to 3 days.

# Expert Advice:

01 -
  • They satisfy that craving for something salty and crispy while actually being good for you
  • The spice blend hits all the right warming notes without overwhelming your palate
  • Once you nail the drying technique, they're impossibly addictive
02 -
  • If they're still slightly soft after the full roasting time, put them back in for 5-minute intervals. Better to over-roast slightly than end up with chewy chickpeas.
  • The spices cling best when you toss them with oil while the chickpeas are still warm from that first roast.
  • These lose their crunch quickly in humid weather—eat within a day or two if you live somewhere damp.
03 -
  • Double the batch if you're meal prepping—these disappear faster than you expect
  • If you accidentally oversalt, toss with unsweetened shredded coconut to balance
  • A squeeze of fresh lime right before serving wakes up all the spices
